Description

With this recipe, I ended up with two impressively sized kulichs :) Enjoy your meal!

Ingredients

  • Wheat Flour - 21.2 oz
  • Milk - 8 fl oz
  • Dry yeast - 1.8 oz
  • Raw cane sugar - 10.6 oz
  • Whole egg - 2 pieces
  • Chocolate eggs - 2 pieces
  • Honey - 1 tablespoon
  • Vanilla salt - 0.7 oz
  • Orange zest - 1 piece
  • Cognac - 1 tablespoon
  • Cottage cheese - 3.5 oz
  • Butter - 7.1 oz
  • Saffron - 1 teaspoon
  • Nuts - 3.5 oz
  • Dried ground orange peel - 3.5 oz
  • Liquid dark chocolate - 3.5 oz
  • Light Raisins, Seedless - 3.5 oz
  • Salt - to taste
  • Vegetable Oil - 2 tablespoons

Step by Step guide

Step 1

Heat half a cup of milk, but do not boil.

Step 2

Add yeast, 2 tablespoons of sugar, and 100 grams of sifted flour. Mix well, cover with foil, and let rise in a warm place.

Step 3

Sift flour with salt.

Step 4

Grate the zest of the orange and add it to the flour. Add vegetable oil.

Step 5

Beat the eggs and yolks with sugar until pale, add honey and vanilla sugar, and mix. Pour the mixture into the flour and stir.

Step 6

Soak saffron in 30 grams of hot water.

Step 7

Squeeze the juice from the orange, add the remaining warm milk, the saffron infusion, and cognac.

Step 8

Add the yeast mixture (the mixture of yeast and milk) and knead the dough, adding cottage cheese.

Step 9

Cut the butter into pieces and place it on top of the dough. Cover with a cloth and let it rise in a warm place for about 30–40 minutes.

Step 10

Pour boiling water over the nuts, candied fruits, and raisins for 5 minutes, then rinse.

Step 11

When the dough has risen, knead it again, adding the candied fruits, raisins, and nuts.

Step 12

Grease the baking dish with vegetable oil and sprinkle with semolina (to prevent sticking). If using a silicone mold, no greasing is needed.

Step 13

Place the dough in the kulich mold and bake in the oven at 392°F for about 30–40 minutes. Reduce the temperature to 302°F and bake for another 20 minutes.

Step 14

Melt the chocolate in a water bath, stirring constantly to avoid lumps. Once melted, quickly pour the glaze over the kulich.

Step 15

Decorate the kulich to taste.
