Easter Kulich with Cottage Cheese

Ingredients

  • Wheat Flour - 2 lbs
  • Cottage cheese - 12.7 oz
  • Chocolate eggs - 4 pieces
  • Butter - 7.1 oz
  • Raisins - 7.1 oz
  • Dry yeast - 0.7 oz
  • Milk - 17 fl oz
  • Sugar - 24.7 oz
  • Egg white - 4 pieces

Prepare the ingredients.

Melt the butter in the microwave or in a water bath.

In a deep bowl, mix 400 grams of sugar, 4 eggs, and pour in the melted butter.

Warm the milk to about 86°F and pour it into the mixture. Stir well.

Add the dry yeast.

Transfer the cottage cheese to the bowl and mix thoroughly with a whisk to avoid lumps.

Sift the flour to aerate it, and gradually add it to the cottage cheese mixture.

At this stage, add the raisins. They do not need to be soaked.

The dough should be elastic.

Transfer to a pot or any other container, cover with plastic wrap, and place in the oven at the lowest temperature (122°F) for 1 hour. The dough should rise.

After an hour, take the dough out of the oven. Stir gently.

Divide the prepared dough into small portions and form balls so that they fill half of the kulich mold.

Distribute the dough into paper baking molds. Place back in a warm place for 1–1.5 hours. After this time, bake in the oven at 170–356°F for 40 minutes. Check readiness with a fork or knife. If the inside of the kulich is raw, leave it to bake for another 10–15 minutes.

Prepare the meringue. Place the egg whites with sugar over a water bath, stirring with a wooden spatula until the sugar is completely dissolved.

Then beat with a mixer on turbo mode until stiff peaks form.

Optionally, you can add a drop of food coloring to the meringue.

Spread the meringue on top of the kulich and sprinkle with confectioner's sprinkles.
