Easter Kulich with Cream
Ingredients
- Butter - 6.3 oz
- Chocolate eggs - 3 pieces
- Milk - 3 fl oz
- Salt - 1½ teaspoons
- Wheat Flour - 17.6 oz
- Raisins - 5.3 oz
- Vanilla salt - to taste
- Dry yeast - 3 teaspoons
- Citrus Zest Mix - 1.1 oz
- Egg white - 2 pieces
- Breadcrumbs - to taste
- Egg white - 2 pieces
- Vegetable Oil - 2 fl oz
- Sugar - 9 tablespoons
- Water - 3 fl oz
- Citric Acid - to taste
Step by Step guide
Step 1
Knead the dough. Combine eggs, softened butter, milk, salt, sugar (6 tablespoons), flour, and yeast, and mix well. Place the dough in a warm place and let it rise twice.
Step 2
Add the soaked and dried raisins, zest, vanilla sugar to the dough, and mix well.
Step 3
Place the dough into greased molds sprinkled with breadcrumbs, filling them to 1/3 of their height. Cover with a towel and place in a warm place. When the dough rises to 3/4 of the height, brush the top with egg yolk.
Step 4
Bake for 60 minutes in a preheated oven at 356°F. Remove the kulich from the mold and place it on its side on a towel. Let cool.
Step 5
Make the cream. Cook a thick syrup from the remaining sugar and water. Whip the egg whites into a fluffy mass, gradually pouring in the hot syrup while whipping, and add a few crystals of citric acid. Continue whipping until the mixture cools completely.
Step 6
Cover the cooled kulich with cream on top and decorate to taste with culinary sprinkles.
