Easter Kulich with Cream
Ingredients
- Wheat Flour - 5 cups
- Egg white - 8 pieces
- Sugar - 1 cup
- Dry yeast - 3.5 oz
- Butter - 7.1 oz
- Vanilla salt - 0.1 oz
- 33% Cream - 1½ cups
- White Vermouth - 1 tablespoon
- Candied fruits - to taste
- Nuts - to taste
- Raisins - to taste
Step by Step guide
Step 1
Heat the cream (I used 10%) to a temperature of 86°F, dissolve the yeast in it, add 2.5 cups of flour, and place the mixture in a warm place.
Step 2
While it rises, rub the yolks with sugar and add the softened butter.
Step 3
When the mixture is ready, add the rubbed yolks (if using candied fruits and nuts, add them at this stage).
Step 4
Mix everything well, add the remaining flour, vanilla sugar, wine (I used vodka), and knead the dough thoroughly, then place it in a warm place for 1 hour to rise.
Step 5
When the dough has doubled in volume, punch it down and place it back in a warm place to rise again.
Step 6
Place the prepared dough into a greased mold, filling it to 1/3 of its height. Let it rest for 1 hour.
Step 7
After that, bake the kulich in the oven at 392°F for 60–70 minutes.
Step 8
Before soaking and decorating with icing, let the kulich cool.
