Easter Kulich with Honey
Ingredients
- Manitoba Flour - 20.3 oz
- Water - 7 fl oz
- Olive Oil - 0 fl oz
- Butter - 4.1 oz
- Acacia Honey - 0.9 oz
- Candied fruits - 3.5 oz
- Sugar - 4.2 oz
- Whole egg - 3.5 oz
- Salt - 0.1 oz
- Vanillin - 0 oz
- Light Raisins, Seedless - 1.1 oz
Step by Step guide
Step 1
For the starter: combine 200 g of flour, 90 ml of water, 20 ml of olive oil, and 20 g of honey, mix, cover with plastic wrap, and leave at room temperature for 2 days.
Step 2
Next, add another 100 g of flour and 50 g of water, mix well, and let it sit for another 2 days at room temperature. Repeat this process 4 times.
Step 3
Then, mix 90 g of the starter with 100 ml of warm water using a whisk, add 60 g of sugar (stirring constantly), 25 g of yolk (2 pieces), and 250 g of flour. Once a homogeneous mass forms, add another 25 g of yolk, mixing for 20 minutes.
Step 4
When the dough stops sticking to your hands, add 65 g of butter while mixing.
Step 5
Cover the dough with a damp towel and let it rise for 8 hours. When it has doubled in size, add 60 g of sugar, 5 g of honey, 25 ml of water, and 25 g of yolk, stirring constantly.
Step 6
After the mixture becomes homogeneous, add another 125 g of flour, 25 g of yolk, 4 g of salt, 1 g of vanillin, 50 g of butter, candied fruits, and previously soaked raisins, mix, cover with a lid, and let it rest for 1 hour.
