Easter Kulich with Hops

Ingredients

  • Dry yeast - 2.1 oz
  • Sugar - 1 cup
  • Wheat Flour - 2 lbs
  • Margarine - 7.1 oz
  • Hops - 1.8 oz
  • Chocolate eggs - 7 pieces
  • Milk - 1 cup
  • Salt - ½ teaspoon
  • Vanillin - 0.1 oz
  • Vegetable Oil - ½ cup
  • Candied fruits - 3.5 oz
  • Raisins - 3.5 oz
  • Dried cranberries with sugar - 3.5 oz
  • Sugar Glaze - 3.5 oz

Step by Step guide

Step 1

Prepare the sponge: mix 1 tablespoon of sugar, 60 grams of fresh yeast, and 50 ml of warm water. Stir well and add 3 tablespoons of flour, mixing until smooth. Leave in a warm place for 20 minutes to allow the yeast to aerate.

Step 2

Prepare the hops. In a saucepan, add 0.5 cups of water, the hops, and boil for 10 minutes.

Step 3

Then take a fine sieve or cheesecloth and strain. Add flour to the resulting broth to achieve a paste-like consistency (similar to liquid sour cream). Mix with the sponge that has already risen.

Step 4

Melt the margarine and let it cool to room temperature.

Step 5

Beat 5 chilled eggs and the remaining sugar until fully dissolved, then add vanillin and salt.

Step 6

Combine the egg mixture with the sponge. Gradually add flour and mix with a spatula. When it becomes difficult to stir with a spatula, knead with your hands. Finally, add the vegetable oil and continue kneading for another 10–15 minutes until the dough is smooth.

Step 7

Leave the dough to rise in a warm place, covered with a towel, for 30–35 minutes.

Step 8

Once the dough has risen, add the pre-soaked dried fruits and 1 tablespoon of flour (to help the candied fruits incorporate better) and knead well. Then evenly distribute throughout the dough and let it rise for another 20 minutes.

Step 9

Divide the risen dough into six parts (for medium kulich weighing 400 grams each) and place in paper molds. Allow the dough to rise again until it has increased by one and a half to two times. Meanwhile, preheat the oven to 392°F (without convection).

Step 10

Place the risen kulich in the preheated oven for 5 minutes at 392°F, then reduce to 180 degrees and bake for 25 minutes.

Step 11

Check the readiness of the kulich using a long wooden skewer. Insert the skewer into the center and pull it out: if it comes out dry with nothing on it, it's ready. Remove from the oven and lay on its side to cool slightly.

Step 12

Prepare the glaze: beat 2 egg whites and sugar glaze with a mixer until stiff peaks form.

Step 13

Decorate the kulich as desired.
