Easter Kulich with Meringue

Ingredients

  • Milk - 8 fl oz
  • Salt - a pinch
  • Dry yeast - 0.4 oz
  • Sugar - 4.9 oz
  • Butter - 8.8 oz
  • Sour Cream - 7.1 oz
  • Powdered Sugar - 8.8 oz
  • Egg white - 8 pieces
  • Wheat Flour - 16.9 oz
  • Candied fruits - 2.5 oz
  • Raisins - 3.5 oz
  • Egg white - 8 pieces
  • White Chocolate - 1.8 oz
  • Red Food Coloring - to taste

Step by Step guide

Step 1

Dissolve the yeast in warm milk, add salt and sugar. Cover and let it rise for about 20 minutes.

Step 2

In a large bowl, knead the dough, adding melted butter, sour cream, powdered sugar, egg yolks, and 480 g of flour. Cover with a towel and leave in a warm place for 1 hour. (Make sure the dough doesn't overflow).

Step 3

After an hour, deflate the dough. Add chocolate, raisins, and candied fruits. Mix well and leave in a warm place. The dough should rise a second time.

Step 4

Once the dough has risen, it's time to bake. Fill the molds halfway (as the dough will rise in the oven). Bake for 30-40 minutes at 180°C.

Step 5

While the kulich is baking, whip the egg whites until stiff peaks form (you can add food coloring). A few minutes before they are done, take out the kulich, cover with the meringue, and return to the oven for a few minutes.

Step 6

Remove the kulich from the oven and while the meringue is still soft, decorate the kulich with candied fruits, chocolate, and nuts.
