Description

The recipe was shared with us by John Smith, the head chef of a popular American restaurant.

Ingredients

  • Wheat Flour - 12.3 oz
  • Dry yeast - 0.7 oz
  • Milk - 3 fl oz
  • Butter - 4.2 oz
  • Chicken Egg - 2 pieces
  • Whole egg - 2 pieces
  • Raisins - 4.2 oz
  • Orange zest - 1 piece
  • Sugar - 3.5 oz
  • Vanilla salt - 1 tablespoon
  • Egg white - 1 piece
  • Powdered Sugar - 7.1 oz
  • Meyer Lemon Juice - ½ spoons
  • Water - 2 spoons

Step by Step guide

Step 1

In a deep bowl, pour in warm milk and dissolve the fresh yeast in it. Add 1 tablespoon of sugar and 1 tablespoon of flour.

Step 2

Mix all the ingredients together and set aside in a warm place for 10–15 minutes.

Step 3

Add 2 eggs and half of the flour, then whisk until smooth.

Step 4

In another bowl, mix the ingredients for the kulich. Melt the butter in the microwave on low power, then combine it with the sugar and vanilla sugar. Reserve 1 teaspoon of the butter for greasing the paper molds.

Step 5

Next, separate the egg whites from the yolks and add the yolks to the bowl with the butter and sugar. Mix well.

Step 6

Pour the enriched mixture into the bowl with the sponge, and mix everything together.

Step 7

Sift the second cup of flour into a large bowl and gradually add it to the other ingredients. Knead the dough.

Step 8

Leave the bowl with the dough in a warm place for about an hour.

Step 9

When the dough for the kulich has risen three times its size, add the raisins and orange zest, knead gently, and mix again.

Step 10

Grease each mold with butter and fill it with batter about one third full. Wait for the batter to rise a second time.

Step 11

Bake the kulich in a preheated oven at 356°F for 40–45 minutes.

Step 12

Whisk the egg whites, powdered sugar, and lemon juice in a separate bowl.

Step 13

Apply the icing to the cooled kulich.

Step 14

Optionally garnish with sprinkles, nuts, or chocolate crumbs.
