Description
You can prepare them in advance and then reheat in the oven. They can be fried in a skillet like regular pancakes. Serve with berry jam.

- Matzah - 3 pieces
- Raisins - 2 tablespoons
- Ground Almonds - 2 tablespoons
- Dried Apricots - 2 pieces
- Coarse matzo - 1.6 oz
- Chocolate eggs - 3 pieces
- Sugar - 0.3 cups
- Lemon - 1 piece
- Meyer Lemon Juice - 1 tablespoon
- Vegetable Oil - to taste
Step by Step guide
Step 1
Soak the matzah in warm water for 3 minutes, drain the water, and squeeze out excess moisture.
Step 2
In a bowl, mix the matzah, raisins, almonds, finely chopped dried apricots, egg yolks, ground matzah, sugar, grated lemon zest, and lemon juice.
Step 3
In a separate bowl, beat the egg whites until stiff peaks form and gently fold them into the batter.
Step 4
In a deep skillet, heat 5 cm of oil to 374°F. Drop 1 tablespoon of batter into the hot oil and fry for a few minutes until golden brown. Transfer to a paper towel.
