Description
A traditional recipe that uses dried cranberries for decoration and flavor. However, if cranberries are unavailable, they can be substituted with lingonberries or other dried berries. Easter Paska for Easter!
Ingredients
- Cottage cheese - 0 lbs
- 10% cream - 15 fl oz
- Whole egg - 4 pieces
- Butter - 10 oz
- Sugar - 5 oz
- Vanilla salt - 0 oz
- Raisins - 0 oz
- Dried cranberries with sugar - 0 oz
Step by Step guide
Step 1
Prepare the necessary ingredients.
Step 2
Wrap the cottage cheese in cheesecloth, place it on a sieve or colander, set it over a suitable container, and place a weight on top to drain excess liquid from the cheese. Leave it for 5 hours.
Step 3
Then pass the cottage cheese through a sieve.
Step 4
Lightly whisk the egg yolks with half of the cream.
Step 5
Heat the remaining cream in a saucepan over low heat, without bringing it to a boil, and gradually stir in the cream and egg yolk mixture. Continue to stir until the mixture thickens.
Step 6
Cream the butter with sugar and vanilla sugar until light and fluffy.
Step 7
Combine the strained cottage cheese, thick cream, and butter with sugar, and whip with a mixer.
Step 8
Add the raisins and cranberries, and mix well.
Step 9
Line the inside of the cheese mold with damp cheesecloth. Pack the curd mixture tightly, cover with a plate, and place a small weight on top. Refrigerate overnight.
Step 10
Invert the finished Easter dessert onto a plate, remove the mold, and then take off the cheesecloth.
Step 11
Serve.
