Description
For the lazy (like me): Of course, it’s better to beat the yolks and whites separately, but for the sake of saving time and effort, you can do it together — it’s not a big deal. However, if you beat them separately, it will turn out very fluffy. If you suddenly have no wine, rum, or cognac at home, you can even add vodka (don’t ask why:). The pie turns out almost unsweetened; those who like such things will love this recipe. And if you want, you can add various flavors to the cream while cooking: cinnamon, vanilla, honey, cloves... This is a family recipe from my friend’s family — I added it to my collection. I hope you will like it too!
Ingredients
- Cake crumbs - ½ cup
- Orange juice concentrate - ¼ cup
- Oranges - 2 pieces
- Sugar - 8 tablespoons
- Chocolate eggs - 9 pieces
- Rum - ⅓ cup
- Walnuts - ½ cup
Step by Step guide
Step 1
For the pie base: Cut 1 orange into 4 pieces, boil in a small amount of water for 15–20 minutes. Remove the seeds and grind through a meat grinder. Add the crushed breadcrumbs and nuts.
Step 2
Whisk 4 yolks until pale, gradually adding sugar.
Step 3
Combine everything and mix well.
Step 4
Whip 4 egg whites until stiff peaks form, then fold into the mixture.
Step 5
Bake in the oven at 180–392°F (350–400 degrees Fahrenheit) for 30 minutes.
Step 6
For the cream: Grind the remaining fresh orange through a meat grinder.
Step 7
Mix the orange juice, rum (or cognac or white wine), and add to the orange.
Step 8
Whisk 4 yolks and 1 whole egg, combine everything and cook over low heat until thickened.
Step 9
Stir until cooled.
Step 10
Add the 4 whipped egg whites, mix, and bring everything to a boil.
Step 11
Soak the prepared mixture into the pie base, covering it completely.
Step 12
Cover with foil and refrigerate overnight.
Step 13
Before serving, sprinkle with the remaining nuts.
