Description
Echpochmaki, brilliant Tatar triangular pastries.
Ingredients
- Milk - 8 fl oz
- Wheat Flour - 17.6 oz
- Sugar - 1 tablespoon
- Vegetable Oil - 3 spoons
- Chicken Egg - 1 piece
- Dry yeast - 0.2 oz
- Lamb - 17.6 oz
- Potato - 17.6 oz
- Onion - 8.8 oz
- Whole egg - 1 piece
- Chicken Broth - 8 fl oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Prepare the necessary ingredients.
Step 2
Pour the yeast and sugar into warm milk, stir well, and let it sit for a couple of minutes until the yeast is activated.
Step 3
Add salt, an egg, and oil, and gradually incorporate the sifted flour to knead the dough. It should not be too stiff.
Step 4
Cover with plastic wrap and place in a warm spot for an hour.
Step 5
Chop the onion into small cubes.
Step 6
Cut the meat as well.
Step 7
Dice the potato into small cubes.
Step 8
Mix the vegetables and meat, seasoning with salt and pepper to taste.
Step 9
Punch down the risen dough and divide it into equal portions. Roll each portion out, place some filling in the center, and seal the edges to form equilateral triangles. Leave a small opening at the top of each echpochmak and seal it with a dough plug. Brush the pastries with beaten egg yolk.
Step 10
Bake the echpochmaks for 30 minutes at 356°F. Then, pour a small amount of broth into each one, cover them again, and return to the oven for another 30 minutes.
Step 11
Place in the oven for another 30 minutes. Serve.
