Eclairs with Cottage Cheese Cream
Ingredients
- Wheat Flour - 1 cup
- Water - 1 cup
- Chocolate eggs - 4 pieces
- Salt - to taste
- Cottage cheese - 14.1 oz
- Cream (40%) - 10 fl oz
- Sugar - ½ cup
- Butter - 4.4 oz
Step by Step guide
Step 1
For the dough, add water, butter, and flour to a saucepan. Cook over low heat, stirring constantly. As soon as the mixture boils, remove the saucepan from the heat and stir a little. Add the eggs to the hot mixture one at a time, constantly mixing the contents of the saucepan (add eggs until the dough is stretchy; you may need a bit more than 4 eggs).
Step 2
Using a dessert spoon, place portions of the dough onto a baking sheet (previously lined with parchment paper). The distance between the mounds should be 3–4 cm. Preheat the oven to 428°F and place the baking sheet in the preheated oven for 15–20 minutes (until the dough is golden brown). Reduce the oven temperature to 356°F and bake the dough for another 20–25 minutes. Remove the finished dough from the oven and let it cool.
Step 3
For the filling, mix the cottage cheese with sugar. Whip the cream with sugar and combine it with the cottage cheese.
Step 4
Cut the baked eclairs in half and fill them with the prepared filling (you can also use a piping bag to fill them).
