Description
Eclairs with Cottage Cheese-Yogurt Cream
Ingredients
- Chicken Egg - 3 pieces
- Water - 8 fl oz
- Wheat Flour - 4.2 oz
- Butter - 3.5 oz
- Cottage cheese - 14.1 oz
- Dessert Yogurt - 10 fl oz
Step by Step guide
Step 1
Prepare the choux pastry. In a saucepan, bring the water to a boil, then reduce the heat to low. Add all the butter and a pinch of salt. Quickly add the flour and stir until it pulls away from the sides of the pan.
Step 2
Allow the choux pastry to cool slightly. Add the egg and mix thoroughly. Gradually add the remaining eggs in the same manner. The dough should be thick enough to hold its shape and not spread on the baking sheet.
Step 3
Preheat the oven to 392°F (392 degrees Fahrenheit). Using a piping bag, pipe the dough onto a baking sheet lined with parchment paper. Bake in the oven for 20 minutes at 392°F (392 degrees Fahrenheit). After that, reduce the temperature to 170–356°F (338–356 degrees Fahrenheit) and bake until golden brown.
Step 4
Do not open the oven while baking the eclairs! After baking, let the eclairs sit in the oven for 5–10 minutes, then open the oven and let them sit for another 5–10 minutes. Remove them all.
Step 5
To prepare the cream, combine the cottage cheese with the yogurt and beat with a mixer until airy and smooth. Fill the eclairs with the cream using a pastry syringe.
