Egg Tartlets with Asparagus and Cheese
Ingredients
- Butter - 1.8 oz
- Wheat Flour - 3.9 oz
- Cheshire Cheese - 1.4 oz
- English Dry Mustard - ½ teaspoon
- Cayenne Pepper - a pinch
- Chocolate eggs - 7 pieces
- Asparagus - 7.1 oz
- Parmesan Cheese - 1.8 oz
- Olive Oil - 2 teaspoons
- Emmental cheese - 5.3 oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Rub the flour with the butter, add the cheese, mustard powder, and ground cayenne pepper (and for the elasticity of the dough, add a couple of tablespoons of cold water).
Step 10
Season with salt and pepper, and sprinkle with Parmesan. Bake for 15 minutes. Serve immediately.
Step 2
Transfer to a bag and refrigerate for 25-30 minutes.

Preheat the oven to 356°F.
Step 4
Roll out the dough as thin as possible and cut out 6 circles.
Step 5
Place them in baking molds and put in the oven for 15 minutes. Remove and brush the base and sides with beaten egg. Return to the oven for 5 minutes.

Rinse the asparagus spears and cut them at a sharp angle into pieces 2.5 cm long.
Step 7
Sauté the asparagus lightly in olive oil (1 tablespoon) in a medium-sized skillet.
Step 8
Spread the grated Emmental cheese on the bottom of the baked molds, and arrange the asparagus pieces around the edges.
Step 9
In a small bowl, crack an egg and carefully pour it into the center of each mold. Repeat for all tartlets.
