- Safflower Oil - 3 fl oz
- Vanilla salt - a pinch
- Cottage cheese - 8.5 oz
- Frozen black currant puree - 3.5 oz
Step by Step guide

Preheat the oven to 392°F. It must be hot beforehand; otherwise, the sponge will not rise. Prepare the baking pan by greasing it with oil and dusting it with semolina so that the batter can be easily removed.
Step 2
Sift the flour, add baking soda, vanilla, and cinnamon, and mix everything together. Combine the kefir with the oil, then add sugar and vinegar.
Step 3
Stir until the sugar is well dissolved. Then, gradually pour the liquid mixture into the flour while whisking thoroughly. The batter will be quite runny. It is important to mix it until bubbles form.
Step 4
Quickly pour the batter into the prepared pan and place it in the oven to bake. It will take about 20-30 minutes, depending on the oven. Do not open the oven for the first 15 minutes, or the batter will not rise.
Step 5
Once the sponge is baked, remove it and let it cool.
Step 6
Whip the cottage cheese and sugar until you achieve a smooth, creamy consistency (it should not run; the mixture should stay on the spoon and not drip). The cream is ready. Spread it on the layers. Top with thawed berries.
