Ingredients
- Eggplants - 17.6 oz
- Butter - 1 tablespoon
- Chicken Egg - 1 piece
- Dried Rosemary - 1 teaspoon
- Salt - ½ teaspoon
- Grated Pecorino Pepato Cheese - 1 tablespoon
- Wheat Flour - 5.3 oz
- Baking Powder - ½ teaspoon
- Vegetable Oil - to taste
Step by Step guide
Step 1
Peel the eggplants and cut them into small pieces. Place them in a pot and cover with water. Bring to a boil and cook until the eggplants are soft. Drain in a colander.
Step 2
Blend the cooked eggplants in a blender, add the beaten egg, butter, oregano, Parmesan, and salt. Add the flour with baking powder and mix well.
Step 3
Heat a skillet over medium heat and add vegetable oil. Spoon the batter, about 50 ml for each fritter, and fry on both sides until cooked through.
