Ingredients
- Eggplants - 2 pieces
- Minced garlic - 2 cloves
- Basil - 10 bunches
- Grated Pecorino Pepato Cheese - 4 tablespoons
- Breadcrumbs - 1 cup
- Chicken Egg - 1 piece
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Slice the eggplants lengthwise and sprinkle with salt.
Step 2
After an hour, rinse off the salt, dry them, and place in a preheated oven. When they become soft, scoop out the flesh from the skin with a spoon. Combine with the other ingredients in a mixer and blend until it reaches a minced consistency. Form balls the size of walnuts, coat them in breadcrumbs, shape them into fritters, and fry in heated oil.
