Ingredients

  • Eggplants - 17.6 oz
  • Tomatoes - 2 pieces
  • Arugula - 1 bunch
  • Melted Cheese - 3.5 oz
  • Wheat Flour - 3 tablespoons
  • Chocolate eggs - 2 pieces
  • Ocean salt - to taste
  • Olive Oil - 3 fl oz
  • Spices - to taste

Step by Step guide

Step 1

Grate the eggplants on a coarse grater, add the eggs, flour, and salt, and mix with a fork. Fry in olive oil, placing small portions and flattening them.

Step 2

Cut the tomatoes into several pieces, drizzle with olive oil, sprinkle with Italian herbs, and place on a preheated grill for 10-12 minutes.

Step 3

In a shallow heatproof dish, place the arugula, arrange the cooked fritters on top, add sliced mozzarella, sprinkle with spices, and place in the air fryer (or oven with grill) for a few minutes until the cheese melts.
