Ingredients

  • Eggplants - 35.3 oz
  • Chocolate eggs - 7 pieces
  • Tomatoes - 35.3 oz
  • Garlic - 10 cloves
  • Salt - to taste
  • Vegetable Oil - 1 fl oz

Step by Step guide

Step 1

When choosing eggplants for this dish, select thick and not very long ones, no more than 15-20 cm. The tomatoes should ideally match the diameter of the eggplant.

Step 2

Prepare all the ingredients at once, as there will be no time during the process. Additionally, prepare two large flat plates, four forks, three flat plates for vegetables, and one small plate for garlic.

Step 3

Wash the eggplants, remove the stems, and cut them crosswise into long slices about 0.5 cm thick. Place them on a plate.

Step 4

Slice the tomatoes into rounds and place them on a plate.

Grate the garlic on a fine grater and place it on a plate.

Beat the eggs with salt in a wide and deep bowl.

The preparatory stage is ready; let's start cooking.

Pour vegetable oil into the frying pan and heat it well. Dip each slice of eggplant into the beaten eggs thoroughly. Using two forks, place them in the hot frying pan and fry on both sides until golden brown.

Using two other forks, transfer them to a large plate. Here, speed is essential: quickly spread garlic on one side of the eggplant, place a slice of tomato at one end, and quickly fold it in half. If you let it cool, the eggplant will break, and nothing will work.

Transfer everything to a second plate. That is, one plate is for folding, and the second is for serving and storing.

While you are getting the hang of it, this dish should be made by two people: while one folds, the other fries the eggplants. Later, when you get the hang of it, you can do it alone.

This dish is delicious both hot and cold. It pairs well with red wine when hot, and is an ideal snack with vodka when cold.
