Description
Eggs Benedict is a classic American breakfast dish that consists of poached eggs served on toasted English muffins, topped with creamy hollandaise sauce and often accompanied by Canadian bacon or smoked salmon. Ingredients
- Chicken Egg - 4 pieces
- Whole egg - 2 pieces
- Hamburger Bun - 2 pieces
- Bacon - 4 pieces
- Water - 1 fl oz
- Meyer Lemon Juice - 1 fl oz
- Salt - to taste
- Ground Black Pepper - to taste
- Malt Vinegar - 2 spoons
Step by Step guide
Step 1
In a saucepan, bring water to a boil, then add salt and white wine vinegar. Use a whisk to create a whirlpool in the water, and gently introduce a cracked egg into the center. Carefully use the whisk to stop the swirling motion so the egg doesn't spread. Cook on low heat for 2 minutes. Carefully remove the poached egg with a slotted spoon and transfer it to a bowl of cold water to set. Take the egg out of the water and trim any uneven edges. Pat dry with a paper towel. Repeat this process four times for a total of four eggs.
Step 2
Fry thin slices of bacon (without adding oil) in a hot skillet until they form a golden crust. Remove from heat and blot the bacon with a paper towel to remove excess fat.
Step 3
Hollandaise sauce. Place the egg yolks in a small metal bowl and set it over a double boiler. Whisk the yolks, and while continuously stirring, gradually add 50 ml of water and 50 ml of lemon juice. Once the yolks start to thicken, remove the bowl from the heat while continuing to stir. Season with salt and pepper to taste. Mix thoroughly and set aside.
Step 4
Cut the hamburger buns in half. Toast each half in a skillet (without adding oil) until golden brown on both sides.
Step 5
Assembly: place the bacon on half of the bun, then add the poached egg, followed by the hollandaise sauce.
