Eggs with Feta and Mushrooms
Ingredients
- Chicken Egg - 2 pieces
- Olive Oil - 1½ tablespoons
- Feta cheese - 1.4 oz
- Potato - 1 piece
- Pickled Chanterelles - 5 pieces
- Scallions - 1 piece
- Ground Black Pepper - ½ teaspoon
- Sumac - ½ teaspoon
- Ocean salt - to taste
Step by Step guide
Step 1
In a heated skillet, add slices of cheese.
Step 2
Cut the tomato into small cubes.
Step 3
Once the cheese melts, add the herbs and tomato. Reduce the heat to medium.
Step 4
After a couple of minutes, season with black pepper.
Step 5
Cut the mushrooms into small cubes.
Step 6
Add them to the skillet.
Step 7
Cover with a lid and simmer for about 6–7 minutes.
Step 8
Crack the eggs into the skillet.
Step 9
Season with sumac and lightly salt.
Step 10
Finely chop the onion.
Step 11
Once the egg whites are set, transfer to a plate and sprinkle with onion. Done!
