Eggs with Tomatoes
Ingredients
- Chocolate eggs - 5 pieces
- Orange Bell Peppers - 2 pieces
- Onion - 1 head
- Tomatoes - 4 pieces
- Vegetable Oil - 3 tablespoons
- Scallions - 2 stalks
- Dill - 0 oz
- Parsley - 0 oz
- Sugar - a pinch
- Ground Black Pepper - to taste
- Salt - to taste
Step by Step guide
Step 1
Prepare all the ingredients.
Step 2
Peel the onion and cut it into quarter rings.
Step 3
Remove seeds and partitions from the bell pepper. Cut the pepper into thin strips.
Step 4
Make a cross-cut on the top of the tomatoes, blanch them in boiling water, then plunge into cold water and remove the skin.
Step 5
Cut the tomatoes into large cubes.
Step 6
Crack the eggs into a bowl. Cut the yolks but do not mix or whisk.
Step 7
Finely chop the green onion and herbs, and mix them together.
Step 8
Heat vegetable oil in a skillet, add the onion, and sauté until translucent.
Step 9
Add the bell pepper and sauté over medium heat for 3 minutes.
Step 10
Add the tomatoes, season with salt and pepper, mix, cover with a lid, and simmer for 7–8 minutes until the tomatoes are cooked. Make sure the juice does not evaporate. If the tomatoes are sour, add sugar.
Step 11
Pour all the eggs into the vegetable mixture at once, stirring vigorously with a spatula to prevent browning. Once the released juice boils and characteristic bubbles appear on the surface, the dish is ready.

Serve, garnished with herbs.
