Description
If you add cheese to cornmeal, you get elardzhi. This is a completely self-sufficient dish — a great meal for breakfast.

- Coarse Cornmeal - 2 cups
- Water - 3 cups
- Cheese Spread - 14.1 oz

Step 1
In cold water, gradually add cornmeal — starting with coarse and then for mchadi, use fine, constantly stirring to avoid lumps. Place the resulting mixture over medium heat and cook for 2 hours, stirring thoroughly and mashing lumps against the sides of the pot. When the porridge thickens and loses the taste of raw flour, remove the pot from the heat.
Step 2
Cut the cheese into pieces and add it to the hot porridge. You can use unsalted Imeretian cheese, regular or smoked sulguni, or mix several types of cheese. Place the pot back over medium heat and, stirring, cook until the cheese completely dissolves. Serve hot.
