Description

- Dried Turkey - 2 lbs
- Rum - 5 fl oz
- Oranges - 2 pieces
- Lemon - 2 pieces
- Butter - 8.8 oz
- Vanilla extract - 2 teaspoons
- Brown Sugar - 8.8 oz
- Farm fresh eggs - 4 pieces
- Wheat Flour - 7.1 oz
- Spices - 2 teaspoons
- Chopped almonds - 1.1 oz
- Hazelnut - 1.1 oz
- Brazil Nuts - 1.1 oz
Step by Step guide
Step 1
Place the dried fruits in a large bowl and pour in the rum (or sherry, brandy, or strong brewed tea), along with the fresh zest of 2 lemons and 2 oranges, as well as their juice. Mix and let sit overnight.
Step 2
Preheat the oven to 320°F. Grease the bottom of a baking dish with butter and line it with parchment paper, allowing the paper to extend 2.5 cm above the edges.
Step 3
Beat the butter, sugar, and vanilla extract until creamy, then add the eggs one at a time. Stir in the flour and spices, the soaked fruits along with all the liquid, and the nuts (which can be chopped if desired). Mix everything well with a spoon or spatula, pour into the prepared dish, and bake for one and a half hours.
Step 4
Then reduce the oven temperature to 284°F and cover the cake with a sheet of foil or a double layer of parchment paper. Bake for another 45 minutes to an hour. Check for doneness with a toothpick. Wrap the finished cake in greaseproof parchment. The cake can be stored for up to 6 months.
