Description
This sauce is perfect for ice cream. If frozen in an ice cream maker, it makes a great dessert.
Ingredients
- Cardamom - 2 tablespoons
- Milk - 8 fl oz
- Whipped Cream - 8 fl oz
- Sugar - 3.5 oz
- White Beans - ¼ piece
- Egg white - 4 pieces
Step by Step guide
Step 1
Slightly crush the cardamom pods and place them in a small skillet. Set over medium heat and toast for about 5 minutes until brown. Then add the milk, cream, and half of the sugar.
Step 2
Extract the seeds from the vanilla bean and add everything to the skillet. Bring to a boil.
Step 3
In a clean bowl, whisk the yolks with the remaining sugar and gently incorporate the hot milk mixture. Pour back into the skillet and set over low heat. Heat, stirring, until the sauce thickens, but do not let it boil, about 2 minutes. Cover and let cool for 3 hours.
