Description
Estonian pastry
Ingredients
- Sugar - 2.8 oz
- Milk - 4 fl oz
- Dry yeast - 0.4 oz
- Butter - 2.8 oz
- Wheat Flour - 10.6 oz
- Salt - 1⅖ spoons
- Whole egg - 1 piece
- Vegetable Oil - 0 fl oz
- Ground Cinnamon - 2 spoons
Step by Step guide
Step 1
In warm milk, mix the yeast with sugar (6 g) and leave it in a warm place for 10-15 minutes. Use the amount of yeast according to the instructions on the package. You can also replace the milk with water, as I have done several times, and the taste does not significantly change. Melt the butter (30 g) and whisk it together with the egg yolk. Add the flour, salt (1/4 tsp), and the milk with the yeast. Mix and knead the dough.
Step 2
Place the dough in a bowl greased with vegetable oil and leave it in a warm place for 1.5 hours. Meanwhile, let's prepare the filling. To do this, melt the butter and mix it with sugar and cinnamon. Roll out the dough to a thickness of 1 cm. Spread 2/3 of the filling on top. Roll the dough into a log. Place it seam side down and gently press to flatten the log slightly.
Step 3
Cut the roll lengthwise, leaving 1-2 cm uncut at the end. Twist the two halves of the roll together. Then shape it into a closed circle. Brush the top with the remaining filling. Bake at 392°F for 20-25 minutes. Before serving, you can sprinkle the pastry with powdered sugar. Enjoy your meal!
