Estonian Sweet Cinnamon Bun
Ingredients
- Milk - 12 fl oz
- Butter - 3.5 oz
- Sugar - 3.5 oz
- Ground Cinnamon - 2 tablespoons
- Wheat Flour - 10.6 oz
- Dry yeast - 0.2 oz
- Chicken Egg - 1 piece
Step by Step guide
Step 1
Take a glass of warm milk, add 0.5 packet of instant yeast (I have 11 g) and 1 tablespoon of sugar. Place the glass in a warm place for about 15 minutes.
Step 2
Melt 50 g of butter, let it cool to room temperature, mix it with the yolk of 1 egg, a pinch of salt, flour, and the milk-yeast mixture.
Step 3
Knead the dough, form it into a ball, and leave it at the bottom of an enamel bowl for 1–2 hours.
Step 4
While the dough is rising, prepare the cinnamon filling.
Step 5
Place butter in a pan.
Step 6
In the melted butter, add 1 tablespoon of flour and dissolve it to avoid lumps.
Step 7
Add cinnamon, sugar (2 tablespoons), and a little milk. Bring the mixture to a thickness of thick sour cream and let it cool.
Step 8
After the dough has risen, roll it out into a rectangle, 30 by 40 cm, spread the cinnamon mixture on it, and roll it into a log.
Step 9
Next, cut the log in half lengthwise and braid the resulting pieces.
Step 10
Shape the braid into a circle, place it in a greased pan with egg white, and put it in a preheated oven for 15–20 minutes.
