Fake Caviar Sandwich
Ingredients
- Vegetable Oil - 17 fl oz
- Apple juice with pulp - 6 fl oz
- Semi-soft cream cheese - 5.3 oz
- Agar-Agar - 0.4 oz
- Sugar - 1.1 oz
- Powdered Sugar - to taste
- Red Food Coloring - to taste
- Brioche - 10 pieces
Step by Step guide
Step 1
Pour the vegetable oil into a tall glass and chill it in the refrigerator or freezer.
Step 2
In a saucepan, combine the juice, sugar, salt, and agar-agar. Bring to a boil and cook for 2 minutes.
Step 3
Then add a couple of drops of food coloring to achieve a red-orange hue similar to that of salmon roe, and let it cool.
Step 4
Using a pipette, squeeze drops of juice into cold vegetable oil. Do this slowly to allow the juice droplets to cool and solidify.
Step 5
Strain the resulting caviar through a sieve; the oil can be used in other dishes, while the caviar should be placed on a paper towel to absorb the excess oil.
Step 6
Mix the cream cheese with powdered sugar.
Step 7
Spread cream cheese on a piece of brioche and top it with faux caviar.
