- Poultry - 28.2 oz
- Tomatoes - 5 pieces
- Chicken Egg - 4 pieces
- Garlic - 3 cloves
- Onion - 2 pieces
- Thyme - 4 stalks
- Butter - 7.1 oz
- Cilantro - ½ bunches
- Olive Oil - 1 fl oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Cut the chicken into large pieces. If you have a big family, use the whole chicken. If there are only a few diners, consider using just the thighs, for example.
Step 2
Heat a skillet on the stove or grill. Pour in olive oil, add crushed garlic and thyme. Add the chicken to the skillet, lightly season with salt. Cook until it develops a beautiful golden crust.
Step 3
Slice the onion into half rings. Once the chicken starts to release its juices and sizzle, add the onion to the pan. Season it with salt to help it release its juices.
Step 4
Place the butter on top. Gently press it into the mound of onions — when the butter melts, the frying will turn into braising.
Step 5
Roughly chop the tomatoes. Spread them over the chicken. Top with the chopped cilantro.
Step 6
Crack the eggs. Beat the yolks with a fork, mixing in salt and pepper. Pour this mixture over the chicken. Cover with a lid. The omelette will cook for 10–15 minutes. It won't be fried; the juices from the chicken and vegetables will be between the eggs and the pan.
Step 7
Serve directly in the skillet, covering with foil.
