- Egg white - 2 pieces
- Sugar Substitute - 6 pieces
- Lemon - ½ piece
- Bran - 0.4 oz
- Water - 3 tablespoons

Step 1
Crush the sugar substitute and dissolve it in a teaspoon of water. Preheat the oven to 302°F (300 degrees Fahrenheit) and line a baking sheet with parchment paper. Whip the egg whites until they form a stiff cream that does not fall out of the container and stays on the whisk (like meringue). Add half of the dissolved sugar substitute to the egg whites, mix with a spoon, and spread it on the baking sheet in a layer about 2 cm thick. Sprinkle a little cinnamon and vanilla on top. Bake for 10–15 minutes.
Step 2
Squeeze the juice from the lemon, grate the zest, or finely chop it. Mix the juice, zest, bran, remaining sugar substitute, and water. Add cinnamon if desired, cocoa, or instant coffee (basically, anything you like). You can also add a spoonful of cottage cheese, yogurt, or kefir. Mix well.
Step 3
Remove the egg white layer from the oven, spread it with the cream, let it soak for 2 minutes to absorb moisture (if it dried out in the oven), roll it up, and leave it to soak.
