Description
The batter is enough to make 6–8 muffins, depending on their size. I usually get 7 medium muffins, as shown in the photo.
Ingredients
- Farm fresh eggs - 3 pieces
- 10% cream - 5.3 oz
- Wheat Flour - 5.3 oz
- Baking Powder - 0.4 oz
- Grated Pecorino Pepato Cheese - 1.8 oz
- Olive Oil - 3 tablespoons
- Pitted olives - 12 pieces
- Feta cheese - 3.5 oz
Step by Step guide
Step 1
Beat 3 eggs.
Step 2
Add 150 g of sour cream and mix.
Step 3
Add 150 g of flour and a packet of baking powder, and mix everything together (I use a mixer or blender).
Step 4
Add grated Parmesan and 3 tablespoons of olive oil. Mix well.
Step 5
For the filling, add diced feta cheese and olives cut into quarters to the batter. Mix with a spatula and pour into molds.
Step 6
Bake in a preheated oven at 356°F for 40 minutes. Don't forget to cover the muffins with foil when they are nicely browned.
