Ingredients
- Canned Peaches - 8.8 oz
- Lemon - 1 piece
- Orange zest - 1 piece
- Sugar - 3 tablespoons
- Green Apples - 2 pieces
- Salt - a pinch
- Goat cheese - 7.1 oz
Step by Step guide
Step 1
Finely chop the figs, removing the stems. Cut the apples into pieces (about 3 cm), peeling them first. Use a vegetable peeler to remove the zest from the lemon and orange (strips about 9x3 cm) and slice them thinly. Squeeze the juice from the lemon and orange.
Step 2
In a small saucepan, combine the figs, orange juice (2 tablespoons), lemon juice (1 tablespoon), zest, sugar, and a pinch of salt. Add a little fig juice (1/4 cup) and place over low heat. Cook, stirring constantly, until thickened (about 5 minutes).
Step 3
Add the apples to the mixture and continue cooking over moderately low heat, stirring constantly, for another 15 minutes. Wait until the apples are soft but still hold their shape, then remove from heat.
Step 4
Serve chilled to room temperature as a dessert with goat cheese or blue cheese and a baguette.
