Fig and Oatmeal Cake

Ingredients

  • Wheat Flour - 1 cup
  • Instant Oatmeal - 1 cup
  • Farm fresh eggs - 3 pieces
  • Orange zest - 1 piece
  • Green Figs - 3.5 oz
  • Light Raisins, Seedless - 1.8 oz
  • Vegetable Oil - 1 fl oz
  • Baking Powder - 1 teaspoon
  • Ground Cinnamon - to taste
  • Natural Yogurt - 2 tablespoons
  • Activated Baking Soda - ½ teaspoon
  • Grated Ginger Root - to taste
  • Ground Nutmeg - to taste
  • Honey - to taste

Step by Step guide

Step 1

Grate the zest of the orange and squeeze out all the juice. Whisk the eggs well with sugar or honey, then add the oil, orange juice, yogurt, zest, and spices. Stir in the oatmeal, mix, and let this mixture sit for about an hour to soften the oats. Rinse the raisins and figs, pour boiling water over them, and let them sit for about 15 minutes. Then dry them with paper towels and chop finely.

Step 2

When the oatmeal has softened, add the chopped dried fruits and flour to the mixture. Gradually add the flour to avoid making the dough too stiff. If necessary, you can add a couple more tablespoons of yogurt or water. Finally, add the baking powder and baking soda, and mix quickly. Do not knead the dough with the baking soda for too long, otherwise, the reaction will finish before baking, and the cake will turn out flat and dense. Pour the batter into a greased baking pan; I used a round springform pan with a diameter of 23 cm.

Step 3

Bake at 356°F for 40–50 minutes. Check for readiness with a wooden toothpick; it should come out dry.
