Description
Essentially, this is not even a cookie, but thin caramel wafers. In Florence during the Renaissance, such a sweet treat, made without flour but with almonds, was prepared for Easter or Christmas and kept as a souvenir, as it could last a whole year without spoiling. Thanks to a Florentine named Mary, who became the French queen, 'Florentines' gained fame beyond Italy. The recipe has remained almost unchanged for centuries: it features the same creamy-caramel base infused with candied orange peels and almond flakes. Today, in memory of the queen who introduced Paris to chocolate, Florentine cookies are usually coated with chocolate glaze.
Ingredients
- Sugar - 4.6 oz
- Honey - 2.5 oz
- 33% Cream - 2 fl oz
- Candied Lemon Peel - 2.5 oz
- Chopped almonds - 5.3 oz
- Chocolate - 4.2 oz
Step by Step guide
Step 1
Prepare the necessary ingredients.
Step 2
Finely chop the orange candied peel.
Step 3
Pour honey and cream into a saucepan.
Step 4
Add sugar and heat to 244°F.
Step 5
Remove the saucepan from the heat, add the almonds and candied fruits, and mix well.
Step 6
Spread the nut mixture at the bottom of small muffin tins or on parchment paper. Place in an oven preheated to 338°F for 5–10 minutes, or until the nuts are golden.
Step 7
Allow the cookies to cool, then remove them from the molds.
Step 8
Melt the chocolate.
Step 9
Dip the bottom of each cookie into it.
Step 10
Let the chocolate set and serve.
