Ingredients
- Chicken Eggs - 8 pieces
- Unsalted butter - 1.1 oz
- Wheat Flour - 1 tablespoon
- 10% cream - 2½ cups
- Parmesan Cheese - 1.8 oz
- Lemon Juice - 1 tablespoon
- Cayenne Pepper - a pinch
- Ground Nutmeg - a pinch
- Spinach - 10.6 oz
- Salt - to taste
- Ground Black Pepper - to taste
- Buns - 4 pieces
Step by Step guide
Step 1
Take a small saucepan and melt the butter over medium heat. Add the flour, stir, and cook until golden, about 2 minutes. Carefully add the cream. Cook on low heat for about 10–15 minutes until the sauce thickens and the taste of flour disappears. Remove from heat, add grated Parmesan, lemon juice, cayenne pepper, and ground nutmeg. Season with salt and pepper to taste, cover, and keep warm.
Step 2
Pour 1 cup of the sauce into a microwave-safe bowl and add the chopped spinach. Cover with plastic wrap, poke a few holes in it, and microwave on high for 1–3 minutes until the spinach is hot. Season with salt and pepper to taste.
Step 3
Place one rack in the middle of the oven and another about 10 cm from the heating element. Preheat only the top heating element. Cut the buns in half, place them on parchment paper, and put them in the oven on the top rack for 2–4 minutes until golden brown. Set the oven temperature to 392°F and move the buns to the middle rack to keep them warm.
Step 4
While the buns are in the oven, prepare the poached eggs. See the link for the recipe in the notes.
Step 5
Arrange the buns on plates. Top with the spinach mixture, then place the poached eggs on top. Drizzle with the remaining sauce.
