Ingredients
- Butter - 3.5 oz
- Liquid dark chocolate - 3.5 oz
- Farm fresh eggs - 3 pieces
- Sugar - 3.5 oz
- Walnuts - 1.8 oz
- Pears - 4 pieces
Step by Step guide
Step 1
Melt the chocolate in a deep bowl over a water bath, add the butter, and stir with a spatula until the mixture is smooth. Add the walnuts. Remove from the heat and set aside to cool.
Step 2
Separate the eggs into whites and yolks. Whisk the yolks with the sugar until pale, and whisk the whites until soft peaks form. Gently fold the egg whites into the cooled chocolate, then add the yolks and fold again.
Step 3
Peel the pears, cut them in half, and remove the cores.
Step 4
Grease a round baking pan with butter, pour in the batter, and place the pears cut side down.
Step 5
Bake for 35–40 minutes at 356°F until the pears are soft. Allow to cool slightly, then carefully invert onto a serving plate.
