Step by Step guide
Step 1
Shell the fresh eggs and add the sugar. Whisk until the mixture increases in volume. For maximum fluffiness, beat the egg whites separately from the yolks. Time is of the essence – do not beat them all together.

Fold in the baking powder, vanilla, cinnamon, nutmeg, and salt. Finally, gradually add the flour. The resulting mixture should be slightly runny, similar to low-fat sour cream. For a chocolatey flavor, mix in two tablespoons of cocoa powder.
