Fluffy Baked Donuts

Ingredients

  • Milk - ½ cup
  • Clarified Butter - 1 tablespoon
  • Dry yeast - 1 teaspoon
  • Sugar - 2.5 oz
  • Egg white - 1 piece
  • Wheat Flour - 8.8 oz
  • Salt - a pinch

Step by Step guide

Step 1

Pour the yeast into warm milk (not hot) and let it sit for 5 minutes.

Step 2

Add the butter and sugar, mixing with a mixer on low speed, then add the egg, flour, and salt while continuing to mix.

Step 3

Switch to a dough hook and knead the dough for a few minutes on medium speed.

Step 4

If the dough is too sticky, add 1–2 tablespoons of flour; if too dry, add a little milk. In the end, the dough should be soft, smooth, and slightly sticky.

Step 5

Place the dough on a floured surface, knead a few times, and shape it into a ball. Place it in a greased bowl, cover with plastic wrap, and put it in a warm place until the dough doubles in size, about 25–45 minutes (I place it in a basin with warm water).

Step 6

Sprinkle flour on the work surface, place the dough, divide it into 2 parts, and roll each part to a thickness of about 0.5–0.7 cm.

Step 7

Cut out circles (I use a 7 cm glass), transfer to a baking sheet lined with parchment paper. Cut out the centers (I use a 2 cm cutter), cover with a towel, and let rise for 25–45 minutes (without drafts).

Step 8

Bake in a preheated oven at 356°F for 6–10 minutes until lightly golden, being careful not to dry them out.

Step 9

Remove the donuts from the oven and let them cool for 1–2 minutes. Dip each one in melted butter and quickly toss in a mixture of sugar and cinnamon. Serve immediately.
