Ingredients
- Garlic - 1 clove
- Potato - 8.8 oz
- Fresh basil leaves - 7.1 oz
- Parsley - 1 bunch
- Basil - 1 bunch
- Onion - 1 head
- Chocolate eggs - 8 pieces
- Courgette - 2 pieces
- Tomatoes - 7.1 oz
- Salt - to taste
- Vegetable Oil - 5 tablespoons
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Chop the onion and garlic. Peel the potato and slice it into rounds. Cut the spinach into strips and blanch for a few minutes. Chop the parsley and basil. Cut the zucchini in half lengthwise and slice.
Step 2
Fry the potato in 1 tablespoon of oil and continue frying on low heat for another 10 minutes.
Step 3
Add the zucchini along with the onion and garlic to the potato and fry for another 5 minutes.
Step 4
Finely chop the tomatoes.
Step 5
Beat the eggs with 6 tablespoons of water, season with salt and pepper to taste.
Step 6
Add the tomatoes, spinach, herbs, potato, and zucchini. Fry the omelette on both sides in the remaining vegetable oil.
