Focaccia with Garlic and Rosemary
Ingredients
- Wheat Flour - 17.6 oz
- Water - 6 fl oz
- Dry White Wine - 2 fl oz
- Dry yeast - 0.9 oz
- Olive Oil - 3 fl oz
- Balsamic Vinegar - 3 fl oz
- Garlic - 2 heads
- Honey - 2 tablespoons
- Fresh Rose Hips - 3 sprigs
- Salt - 1½ teaspoons
- Powdered Sugar - 1 teaspoon
- Ground Black Pepper - ½ teaspoon
Step by Step guide
Step 1
Preheat the oven to 200°C.
Step 2
Dissolve the yeast in 90 ml of warm water, adding the powdered sugar.
Step 3
In a deep bowl, mix the flour with 1 teaspoon of salt. Make a well in the flour, pour in the dissolved yeast, and sprinkle some flour on top. Place in a warm place for 20 minutes.
Step 4
Add the wine, 75 ml of olive oil, and the remaining warm water. Knead the dough for about 5 minutes. Cover the bowl with a damp cloth and let it rise in a warm place for 1 to 1.5 hours.
Step 5
In a skillet, heat 1 tablespoon of olive oil, add the garlic cloves and leaves from two sprigs of rosemary. Sauté the garlic until golden, then add the balsamic vinegar, honey, salt, and pepper. Leave on very low heat for 10 minutes to soften the garlic.
Step 6
Grease a baking dish with olive oil, place the dough in the dish, pour the garlic sauce over it, and push the garlic deeper into the dough. Break a sprig of rosemary and also insert it into the dough. Cover with a damp cloth and let it rise for another 25-30 minutes.
Step 7
Bake for 10 minutes at 200°C, then reduce to 180°C and bake for another 30-35 minutes.
Step 8
Drizzle the finished focaccia with olive oil.
