Focaccia with Tomatoes, Olives, and Cheese
Ingredients
- Wheat Flour - 22.9 oz
- Salt - 0.3 oz
- Sugar - 0.2 oz
- Cumin leaves - 0.7 oz
- Dry yeast - 1.1 oz
- Oregano - 0.7 oz
- Fresh Rose Hips - 0.7 oz
- Water - 17 fl oz
- Sun-Dried Tomatoes - 10 pieces
- Olive Oil - to taste
- Cheshire Cheese - 2.1 oz
- Garlic - 2 cloves
- Coarse Salt - to taste
- Pitted olives - 30 pieces
- Herbes de Provence - to taste
Step by Step guide
Step 1
Mix the flour, salt, yeast, sugar, and finely chopped herbs. Add warm water and knead the dough for about 12 minutes by hand or 5 minutes with a mixer.
Step 2
Transfer the dough to a floured surface and cover with a towel. Leave for 30 minutes until it doubles in size. Preheat the oven to 392°F. Punch down the dough.
Step 3
Roll out the dough into a long rectangle and sprinkle the center with half of the olives, tomatoes, and grated cheese. Fold one third of the dough over the sprinkled center and place the remaining olives, tomatoes, and cheese on top. Cover the filling with the empty part of the dough.
Step 4
Seal the edges and carefully roll into a log to form an oval shape. Brush with olive oil, sprinkle with minced garlic, coarse salt, and herbs.
Step 5
Transfer to a baking sheet lined with parchment paper and bake for 30-35 minutes or until done. Cool and cut into pieces.
