Four-Layer Cheesecake
Ingredients
- Philadelphia Cream Cheese - 21.2 oz
- Sugar - 5.3 oz
- Potato starch - 0.5 oz
- Salt - a pinch
- Eggs - 3 pieces
- Vanilla Sugar - a pinch
- Milk Chocolate - 3.5 oz
- Cookies - 5.3 oz
- Butter - 5.3 oz
- Cream - 5 fl oz
Step by Step guide
Step 1
Melt the butter in a water bath. Crush the cookies into crumbs and add them to the butter, mixing well. The mixture should be thick enough; add more cookies if necessary.
Step 2
Line the bottom of a springform pan with a diameter of no more than 25 cm with parchment paper and secure it. Press the butter and cookie mixture evenly into the bottom of the pan and place it in the refrigerator.
Step 3
Preheat the oven to 392°F.
Step 4
Mix the Philadelphia cream cheese with sugar, starch, vanilla sugar, and salt until smooth (from now on, mix all ingredients only with a spatula, without a mixer).
Step 5
Add the eggs one by one, mixing continuously until smooth.
Step 6
Pour in 100 g of cream and mix well again. Gently shake the pan to release any air bubbles.
Step 7
Pour half of the mixture into the pan with the already set cookie base; add cocoa, food coloring, fruits, or berries to the other half—whatever you like—and carefully pour it into the pan as well. You can also layer fruits or berries between the layers if desired, which will make it easier to separate the layers. (You can skip making two different layers.)
Step 8
Bake at 392°F for 10 minutes, then at 230°F for 1 to 1.5 hours; it should jiggle when moved.
Step 9
Cool the cheesecake in the pan at room temperature first, then refrigerate it.
Step 10
Break the chocolate and melt it in a water bath, adding 50 g of cream and mixing well. Let it cool slightly, then pour the chocolate over the cheesecake and return it to the refrigerator. Leave it there for at least a couple of hours, ideally overnight or for a full day. After that, carefully run a knife around the edges of the cheesecake to detach it from the pan and gently remove it.
