Fragrant Easter Kulich
Ingredients
- Wheat Flour - 2 lbs
- Sugar - 2 cups
- Milk - 12 fl oz
- Butter - 10.6 oz
- Dry yeast - 1.8 oz
- Salt - 1 teaspoon
- Raisins - 7.1 oz
- Vanillin - to taste
- Chocolate eggs - 6 pieces
Step by Step guide
Step 1
Dissolve the yeast in 375 ml of warm milk, add half of the flour, stir, and place in a warm spot.
Step 2
When the mixture has doubled in size, add salt, egg yolks (reserve 1 yolk for glazing), mixed with sugar and vanillin (0.5 packet), melted butter, stir everything together, and add the egg whites (beaten to a foam) and the remaining flour.
Step 3
Knead everything well. The dough should not be too thick. Place it in a warm spot. When the dough has risen to double its size, add raisins (previously soaked in cognac overnight). Mix everything and place it in molds. For a fluffier kulich, fill the mold to one-third of its height; for a denser one, fill it to half its height.
Step 4
Place in a warm spot, cover with a towel, and when the dough has risen to three-quarters, brush the top with the reserved yolk and place in the oven (not too hot) for 60 minutes, periodically turning the mold. When the top is browned, cover it with a circle of parchment paper moistened with water. Check for readiness with a stick. The dough should not stick to it.
