Description
As a bonus, I also caramelized the pumpkin separately and added it to the porridge. To do this: simmer the pumpkin in water in a pan and add sugar, bring it to a boil and cook until the water and sugar form a caramel.

- Rice - 2 cups
- Water - 4 cups
- Ocean salt - to taste
- Pumpkin - 17.6 oz
- Milk - 2 cups
- Honey - to taste
- Vanilla salt - to taste
- Desiccated coconut - to taste
- Ground Cinnamon - a pinch
- Light Raisins, Seedless - to taste
Step by Step guide
Step 1
Rice: the amount depends on how much you want to prepare + use twice as much water as rice (you can cook it in milk), season with salt to taste.
Step 2
Pumpkin: peel and grate the pumpkin, place it in a pot and cover with milk, simmer until it is soft. Add honey to taste (make it sweeter, as rice will be added later), vanilla, shredded coconut (you can add more), cinnamon, and raisins.
Step 3
Mix the rice with the pumpkin (you can add a little more milk and cook it a bit longer, or you can just cover it and let it sit for a while).
