Fragrant roll pancakes with nut filling

Ingredients

  • Chicken Egg - 1 piece
  • Brown Sugar - 2½ tablespoons
  • Wheat Flour - 1 cup
  • Baking Powder - 1¼ teaspoons
  • Butter - 1 tablespoon
  • Pecan - 2.5 oz
  • Maple syrup - 3 tablespoons
  • Cinnamon - ½ teaspoon
  • Powdered Sugar - ½ cup
  • Vanilla salt - 1 teaspoon
  • Milk - to taste

Step by Step guide

Step 1

Heat a skillet or pot with fat. Whisk the eggs and mix with milk, vanilla, and brown sugar in a large bowl. Sift in the flour, cinnamon, and baking powder. Add the butter and mix lightly. Pour 2–3 tablespoons of batter onto the hot skillet and cook until bubbles form around the edges and a bit on top. Flip the pancake and cook a little longer.

Step 2

Meanwhile, toast the nuts (I used walnuts) in a dry skillet until fragrant. Place them in a mini food processor with the syrup and blend until smooth (adjust the thickness of the paste as desired by adding more syrup).

Step 3

For the glaze, sift the powdered sugar into a bowl, then add cinnamon, vanilla, and a little milk until you achieve the desired consistency.

Step 4

Spread a spoonful of the paste on the pancake and roll it up, drizzling the glaze on top. Finally, sprinkle a little cinnamon.
