French Almond Cake with Pears and Prunes

  • Wheat Flour - 8.8 oz
  • Butter - 11.3 oz
  • Pears - 2 pieces
  • Prunes - 8.8 oz
  • Powdered Sugar - 8.8 oz
  • Farm fresh eggs - 4 pieces
  • Ground Almonds - 7.8 oz

Step by Step guide

Step 1

Sift the flour (220 g) into a bowl. Rub in the butter (150 g) and powdered sugar (70 g). Alternatively, you can combine everything in a food processor until the mixture resembles crumbs. Add the yolk and knead the dough. Roll the dough into a ball, wrap it in plastic wrap, and chill for 1 hour.

Step 2

Roll out the dough and place it in a low, round, removable-bottom pie pan with a diameter of 23 cm. Trim any excess and place it in the freezer for 30 minutes. Preheat the oven to 356°F. Prick the base with a fork, line it with parchment paper, fill with dry peas to prevent puffing, and bake for 20 minutes. Let it cool.

Step 3

For the almond filling, beat the butter (170 g) with the powdered sugar (180 g) using an electric mixer. Add the beaten eggs, then the almonds and flour (30 g), continuing to beat. Transfer the filling to the crust and smooth it out.

Step 4

Arrange the pears and prunes in a pattern, pressing them in slightly. Bake in the center of the oven for 30 minutes. Reduce the oven temperature to 320°F. Cover with foil and bake for another 20 minutes. Allow to cool, remove from the pan, and dust with powdered sugar.
