French Almond Cookies
Ingredients
- Corn Flour for Polenta - 1 tablespoon
- Vanilla extract - to taste
- Wheat Flour - 1 tablespoon
- Egg white - 1 piece
- Butter - 1.8 oz
- Egg white - 3 pieces
- Powdered Sugar - 4.2 oz
- Chopped almonds - 3.5 oz
- Rum - 2 tablespoons
- Milk - 3 fl oz
- Puff Pastry - 15.9 oz
Step by Step guide
Step 1
Sift the powdered sugar and combine it with the butter. Whip until creamy. Add the egg yolks.
Step 2
Chop the almonds and mix with the liqueur. Combine with the custard. To prepare the custard, beat 1 yolk with 20 grams of powdered sugar, wheat flour, and corn flour. Combine with hot milk and boil for 1 minute. Add the vanilla extract.
Step 3
On a floured surface, roll out the dough. Cut the dough into 8 circles. Place 4 circles in greased baking molds and spread them along the walls.
Step 4
Place the almond filling in the center of each mold, leaving 2 cm at the edges. Brush the edges with water, cover with the remaining circles of dough, and pinch the edges to seal the filling. Make holes with a fork. Chill for 30 minutes.
Step 5
Make the glaze. For this, beat the egg and powdered sugar. Brush the surface of the pastries with the glaze. Make cuts on the surface of the pastries with a sharp knife.
Step 6
Preheat the oven to 428°F. Bake for 20 minutes. Remove from molds and cool.
