- Egg white - 4 pieces
- Cream of tartar - ¼ teaspoon
- Vanilla extract - 1 teaspoon
- Powdered Sugar - 8.8 oz
- Meyer Lemon Juice - 1 teaspoon
- Coconut flakes - 8.8 oz
- Desiccated coconut - to taste
Step by Step guide
Step 1
Preheat the oven to 302°F. Line a baking sheet with parchment paper.
Step 2
Separate the egg whites from the yolks. Whip the egg whites until stiff peaks form. Add the cream of tartar and whip again. Gradually add the powdered sugar while continuing to whip.
Step 3
Drizzle with lemon juice, vanilla extract, and sprinkle with coconut flour. Mix thoroughly.
Step 4
Spoon the mixture onto the baking sheet. Bake for 30 to 35 minutes.
Step 5
Turn off the oven and let the cookies sit for 5 minutes. Sprinkle with shredded coconut.
