Ingredients
- Milk - 1 qt
- Kefir - 3 tablespoons
- Pizza Flour - 6 cups
- Sugar - 6 tablespoons
- Farm fresh eggs - 5 pieces
- Salt - a pinch
- Activated Baking Soda - 1 teaspoon
- Jam - to taste
- Vegetable Oil - to taste
- Whipped Cream - to taste
- Brandy - 2 tablespoons
Step by Step guide
Step 1
Pour the milk into a bowl, add the eggs, add the sugar (5 tablespoons), dissolve the baking soda in a teaspoon of kefir, add another 2 tablespoons of kefir, and mix well.
Step 2
Gradually add one cup of flour at a time. Whisk the crepe batter thoroughly until it becomes a homogeneous mixture, adding vegetable oil to the mixture. The consistency should resemble thin sour cream, without lumps. Add salt.
Step 3
Cover the bowl and wait for about 30 minutes until bubbles form on the surface of the batter and the mixture becomes even airier. Before frying, add the brandy and mix well.
Step 4
Add a drop of vegetable oil to the batter. Heat a small frying pan to the size of a crepe (this is essential) and grease it with vegetable oil. Pour about 1 tablespoon of the mixture into the pan so that it spreads evenly. Fry one side for 1 minute, then flip the crepe and fry until the other side is golden brown.
Step 5
After every second crepe, add a drop of vegetable oil to the pan.
Step 6
Place the crepes on a plate. Spread with strawberry jam, then with whipped cream, fold the crepe in half, and serve.
